Essentially of Icelandic origin, lumpfish roe comes from the natural habitat of the species Cyclopterus Lumpus. There are two types of lumpfish roe, namely red and black. The color is achieved through the use of dyes. The firmness of the grains and the quality of the dyes are two factors to consider in order to obtain an impeccable product.
