Tobikko is the Japanese name for flying fish roe, from the species Cypselurus spp. It comes in 5 colors, the most well-known being green, which is flavored with wasabi, a condiment widely used in Japanese cuisine. The other colors are red, orange, gold, and black, achieved through food coloring to brighten the natural color.
